How to Brew Turkish Coffee on Sand: 5 Secrets from the Masters

Brewing on sand heats the cezve evenly from every side, so the coffee rises slowly without burning. Here are the secrets:
1. The water must be cold
Coffee starts with cold water. Hot water opens the aroma immediately and kills the foam.
2. Grind it as fine as powder
Turkish coffee is the most finely ground coffee in the world. It should have the consistency of icing sugar.
3. Stir only at the beginning
Stir once after adding the coffee to the water. Stirring after it starts heating breaks up the foam.
4. Move the cezve through the sand
Rather than holding it still, turn the cezve slowly and adjust how deep it sits in the sand. That is how you control the heat.
5. Serve in two stages
When the foam rises, lift the cezve and share the foam between the cups, then return the cezve to the sand and pour the rest.
